Sweet and Sour Carrots

The sauce on these carrots is so easy to make. I served the carrots with pork and dipped the pork into leftover sauce, yum!

Sweet-and-Sour Carrots

Ingredients

1 pound whole carrots

4 T cider vinegar

2 T olive oil

4 t sugar

2 smashed garlic cloves (I cheated and used the kind from a jar…still tastes good!)

Salt

Red pepper flakes

Directions

1. Peel and halve 1 pound carrots lengthwise and cut into 3-inch pieces.

2. Place carrots in steamer until tender, about 15 minutes.

3. In a small sauce pan, simmer 2 tablespoons cider vinegar, 1 tablespoon olive oil, 2 teaspoons sugar, 1 smashed garlic clove and a pinch of salt until syrupy, about 3 minutes.

4. Add a pinch of red pepper flakes. Season the carrots with salt and drizzle with the sweet-and-sour sauce.
